Solterra and Cardel Homes rolled out the red carpet (or at least swept off the subfloors) for the debut of a new home collection and six new models. Over 100 Realtors got to walk through the in-progress model complex for a sneak peek of The Cardel Collection, which introduces the new Renaissance Series, starting in the $400s. With the addition of the new collection, Cardel now offers 12 floorplans at Solterra. All in Solterra’s signature European-inspired architectural style. The models will be finished and open for tours this August.
Keep your eyes on Green Mountain. Like a vernal barometer, its annual shift from winter bisque to spring jade is a happy sign of the season to come. In late May, prairie wildflowers blossom, vibrantly framing the mountain’s 20-plus miles of hiking, running and mountain biking trails.
There’s always plenty of wildlife to spot up there too, so take your binoculars if you go. Once the home of wild bison herds, Green Mountain still supports bluebirds, hawks, rabbits, mule deer and coyotes. Peaking at 6,856 feet, the mountain offers spectacular views of Denver and the foothills — an idyllic setting for the spring’s first picnic. Other great ways to celebrate the season? Go sailing on Bear Creek Lake. Drive the Lariat Loop, a 40-mile scenic byway with winding roads and breathtaking views. Check out the dinosaur tracks and bones embedded in the rocks of Dinosaur Ridge, an outdoor museum. Play golf at Fox Hollow or Fossil Trace. Or explore the 200 miles of trails in Jefferson County open space.

Ah, there’s nothing better than coming home to a steaming pot of chili after an epic day on the mountain. But here’s the problem. If everybody goes skiing, who’s doing the cooking?
This delicious chicken chili recipe solves the dilemma by letting you stew your chicken and prep your (very few) ingredients on Friday night. On Saturday evening, all that’s left is a little assembly, some simmering and voilà — a big pot of authentic Mexican Red Chicken Chili. Be sure to have fresh flour tortillas on hand for dipping.
5-6 lb. roasting chicken
3 large onions
2 celery stalks
4 cloves of garlic
½ cup mild red chile powder (fresh, authentic Mexican brand preferred)
1-1/2 c. flour
½ tsp oregano
Freshly ground black pepper
Place chicken, one halved onion, celery and carrots in a large stockpot. Cover with water, lightly salt and bring to boil, then turn down and low-simmer for two hours. Remove chicken and refrigerate. Strain stock, discarding vegetables, and refrigerate overnight in one or two large pitchers. Coarsely chop two remaining onions, mince garlic and refrigerate. Once the chicken has cooled, de-bone and dice coarsely.
The next day, skim fat from chicken stock and place in a measuring cup. Add enough olive oil to equal 1-1/2 cups. (You may also discard the chicken fat and just use olive oil.) In a large stockpot, sauté onions and garlic in fat/oil until onions are translucent. Add flour and stir until completely smooth and bubbly. Cook for two minutes. Stir in chile powder and cook for 1 minute, careful not to burn. Add one gallon of stock, diced chicken, oregano, and salt and pepper to taste. Increase heat and stir frequently until chili is simmering. Simmer for at least ten minutes until thickened. If you want thicker chili, use flour and cold water to make a thin paste and stir into chili.

If you live in Solterra then you already know. You’re at least a half-hour closer to Colorado’s Front Range ski resorts. Making those powder days all the more powderful. Our thanks to everyone who helped make this year’s annual Wine Festival a success. It truly has become the don’t-miss-event of the summer. The August 11 soiree was a lot of fun. And the nearly 600 in attendance enjoyed a delightful mix of live music, delicious food pairings and, of course, wines from around the world.
